Chocolate Banana Nut Bread
Have you ever placed an online grocery delivery order in a rush, only to find that instead of ordering 6 bananas you ordered 6 BUNCHES of bananas? Guilty! But I’m grateful for that mistake because it led me on a quest to bake the perfect banana bread. Enjoy!
INGREDIENTS
Nonstick oil spray
1¾ cups all-purpose flour
3 tablespoons cocoa powder (optional - skip for plain banana or banana nut bread)
1½ teaspoon baking soda
¾ teaspoon sea salt
3 large eggs
1½ cups sugar
1 cup mashed ripe bananas (roughly 2 large bananas)
½ cup chopped walnuts (optional)
¾ cup vegetable oil or olive oil
INSTRUCTIONS
Preheat oven to 350°. Coat a 9 x 5 x 3” loaf pan with nonstick spray. Whisk flour, cocoa powder, baking soda, and salt in a medium bowl. Whisk eggs, sugar, bananas, and oil in a large bowl until smooth. Add nuts and stir until combined. Scrape batter into prepared pan and smooth top.
Bake until a tester inserted into the center of bread comes out clean, 60–70 minutes. Transfer to a wire rack; sprinkle a little additional sea salt on top, and let bread cool in pan for 15 minutes. Run a knife around inside of pan to release the bread. Turn out onto rack and let
TIP: Banana bread can be made 3 days ahead of time! Store airtight at room temperature.
