Raw Overnight Oats
Overnight oats are a “cold” version of oatmeal that you can make in batches and requires NO COOKING. It’s a great option if you are meal prepping and want breakfast available immediately. Just like hot oatmeal or a yogurt parfait, you can play around with ingredients and toppings to your liking. My go-to is adding some fresh blueberries and extra chia and flax seeds on top. This recipe calls for coconut milk which is a personal preference, but you can substitute with your milk of choice. Coconut milk is a bit higher in fat, but they are healthy fats and I prefer to have a little extra sustenance in my breakfast - and I just LOVE the coconut flavor. I first got hooked on overnight oats at Juice Press. They have a pretty good one in their grab-and-go section that also uses coconut milk, which inspired this recipe.
Raw Overnight Oats with Coconut Milk
Prep time: 5 minutes
Ingredients:
1 cup steel cut outs
1 cup coconut milk
1/2 cup water
1 tablespoon maple syrup
1 teaspoon vanilla extract
a few sprinkles of cinnamon powder (~1/2 teaspoon)
chia + flax seeds (optional)
Tip: The base ingredients are 1 part oats, 1 part milk of choice, and 1/2 part water. If you follow that ratio, it should be easy to make even larger batches. When I used canned coconut milk for convenience, I use the whole can, then measure the oats using the can, then measure half a can of water. No measuring cups needed!
Instructions:
Mix all ingredients in a large bowl, pour into mason jar or tupperware, cover and let it sit still in the fridge for at least 2 hours. Enjoy all week.
