Balsamic Walnut Asparagus

BALSAMIC WALNUT ASPARAGUS

Total time: 10 minutes

Servings: 4 to 6

INGREDIENTS

  • 1 bunch (1 pound) asparagus

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon water

  • 3 tablespoons balsamic vinegar

  • 1 tablespoon lemon juice

  • 1 tablespoon honey

  • 1/4 cup raw, chopped walnuts (I also use pistachios)

  • Sea salt and freshly ground pepper, to taste

INSTRUCTIONS

  1. Wash asparagus and chop off 1/2 inch of thick ends.

  2. Add olive oil and minced garlic to a medium skillet; cook on medium heat for 2 minutes.

  3. Add asparagus and the remaining ingredients. Cook on high, stirring often, until asparagus is tender, lightly charred and liquids have evaporated (roughly 6 minutes).
